look at the marks on the frame, the heli should hit +10 at the top mark, -10 at the bottom mark, 0 at the middle and +5.5 at the top quartile marking...

Once you have that mechanically, then set your pitch curve as a straight line for from -10 to +10 and the thorttle curve as a V shape in idle up 2....

This will give full throttle at both maximum pitch deflections and give you reasonable headspeed at all pitch settings, you may need to fiddle with the throttle curve to get it spot on...
