Don't leave off the shrouds, they fortify the landing gear. Without it, it'lll break off faster. Also they have an aerodynamic function.

I'm flying with the standard wheels, wheel spats and shrouds, off a field that is not flat, has cracks in it and long grass.

In the rougly 285 flights so far, I have experienced no problems whatsoever.
