I already know how to fly; I learned on a plane that was definitely not a trainer. I want a trainer now just for a relaxing flight, not really to learn much on. I doubt I'd ding it up.
You want something that the wind isn't as likely to blow all over the place, but is also more relaxing to fly. And if I'm correct, you also want something that looks good. There are a couple that come to the top of my head: One would be the Great Planes Cherokee, and the other candidate would be an RV-4. Both are capable of reasonably slow flight, and neither get knocked around by the wind as much as a Cub. If part of your ambition is to give someone a little stick time who's never flown before, then my choice would be the Goldberg Eagle 2. So there you have it!
