The FAQ has how to break-in the motors and the gears.

Like 1sgt said, plastic gears don't need a break-in. I have steel gears from RCCommand and I broke them out of principle, but they really didn't need it. The standard HL metal gears definitely need it as a result of the manufacturing defects (burrs, etc). Again, the FAQ addresses this a couple of times in pretty good detail.
