If it were me I wouldn't go making engine decisions until you get the plane.
First off you need to find out if the plane has any extra ballast in it for the CG. I have seen a few airplanes with weight either in the tail or in the nose to make it balance. If the plane has extra ballast in the tail you could use a lighter engine like the DLE111 or a DA85.
As far as servos go I would go with Hitec 7955 all the way around, the main reason I say that for the small price difference between the 7985 and the 7955 its not worth the worry. And you will always be able to use the 7955 in the next airplane they simply do not wear out.
The other place to save weight is in how you power it. I run (2) 1100 Mh A123 batteries on all my aircraft 500 cc to 100 cc
Both batteries have two sets of power leads and one balance connector. One 22ga lead with std. jr connector for Ignition and smoke pump and One 16 ga lead with a deans to a wolverine switch for the receiver. I use a 42% products opti kill and no switch for the ignition and no switch for the smoke pump. I get two flights and recharge and usually put between 650 and 800 Mh back in after 30 minutes of flying. They are quick to recharge and bullet proof.
