Hopefully some breather holes into the canopy area will work. But maybe you can make some type of 'ram air' system out of tubing such that when the plane is flying air is rammed into the canopy via a plastic tube and exits out via another plastic tube. Ideally the air inside the canopy will have the same temperature and humidity as outside the plane. Some type of circulation of air inside the canopy is probably required.
