Our club used to have "instructor night". Two or three instructors would be at the field and help whoever showed up. It was nuts; with, at times, 4 or 5 students standing in line waiting.

Our solution is a sign in board. The student prints in his name and the time he arrived. After each flight you put a checkmark behind his name. The next free instructor helps the guy with the least amount of checks.
