So I have an ICE 100 and a 16/25/2
I will buy whatever battery or batteries (single, serial. or parallel) that will
give me the most speed at as close to stock flight times as possible (WITHIN REASON)

Speed vs flight times is a delicate balance of battery weight, CG, and throttle position..............................
verses
Prop choice coupled with motor choice.
To guess at your full throttle flight time on a 8x4 E prop with a 3s5000 battery (or any other combination) and your MEGA 16/25/2 on a ICE 100 would be next to impossible.
Depending on battery quality, air temperature, how you fly (straight lines, circles, multiple verticals with full throttle diving, multiple verticals with no throttle cruising up high on thermals, etc...) you might get up to 20 minutes for each battery. Each prop will offer you different flight times and different flight characteristics. You will have to set your LVCO to a very conservative 3.5 volts and time yourself while you fly your Stryker your way.
Lastly, at MAX speeds, time really has a way of getting lost, you MUST concentrate on that Stryker, and if she is running over 120mph, you better NOT take your eyes off her for a second !!!!!
