The two servos is the best way. There are some other things to consider though. 1st, with two servos in the tail your CG will be effected. If this is a larger plane it may not be a big deal. The extra weight can be made up for easily in the nose. If it is a smaller plane the extra weight can be a bear. If it causes you to add lead to the nose then it's not worth it. 2nd, how are you going to drive these servos? If your radio does not have a way to mix them, then you are going to need a reverse Y harness. These reverse Y harness are hit or miss in reliability from my experience.
If you want to drive them from one servo, it's not a big deal to make a split push rod. Dave Brown Products makes a nice fiberglass one. It's also easy to make one with a dowel rod and some push rods.
A final consideration may be the plane. If this is a sport type plane, the split push rod is easy to do. If it is a 3D or fully aerobatic plane. The two servo set up will give you more throw, and be stronger.
