The LT-40 is an excellent kit for your first build. We have built 5 of them where I work.

Keep in mind it is purely a trainer and it flies just like a trainer. There are a lot of things you can do to bash them though. You can reduce the dihedral in the wings and that helps a lot. I've seen them converted to tail draggers. You can certainly lighten them here and there.
