You'll need 3000+ watts to get to the speed you want. The 1910 is good for 2400w burst on paper but you can usually push them a little harder. Putting the 1910/1Y on 8S with a 8x8 carbon prop will get you close to where you want to go. But it's pushing all the components pretty hard, 120 amps, 3000 watts...
Going to a 1915/1Y on 12S with the 8x8 is better, 80A and 3250w. We're getting the amps down and increasing watts and increasing prop speed. At this point you can use pretty much off the shelf stuff like the ICE HV ESC and 2 6S packs in series. Using a 2650mA 40C pack is good for 100+ amps and they are pretty thin so you can hide them easy back to back. They are 1 3/8" thick and also are fairly light.
Going to a bigger Neu motor would be better but then yo uhave to use 14S and higher which is harder to do. Or you could contact Steve and ask him to wind you a 1917 or 1920 at a higher kV.
