I want to buid a wing that can do some snaps AND harriers AND elevators... I know that these maneuvers are requesting very opossite characteristics on the wing. I´m planning to use an E169 in the root and a fun fly airfoil on the tip to include some taper planform, but how much? pattern planes have about 55-60% of taper, I want to use less than that to improve stalled flight .... any suggestions?

Use a tip chord that is 70 to 100 % of the root chord to avoid tip stall.
Use a low aspect ratio of 4 or 5 and large ailerons with25 to 35% of the wing chord and at least 50% of the semispan to improve roll rate. Use a large rudder with lots of throw. Use light wing and power loadings.
Hmmm.... sounds like a 3D fun fly configuration. Copy the Ultrasport 1000.

It looks like the Ultra Sport 1000 is no longer available but a smaller version is.
