I also think zero is a good place to start. How about locating the information on the airfoil
design, and find out at what angle lift starts on the wing, and then adjust the incidence to give
you the correct angle for how you want the plane to fly. Andy Lennon's book has a lot to say
about wing incidence and lift.

Any serious aerobatic model deserves an equally serious 0-0-0 setup. In practice you just end up with 1/16 to 1/8 inch of elevator trim to provide what little stability the model requires based on how far back a CG locaton you can stand.
