The kit route is pretty much what I was thinking about but you never know there may be something out there that I have not looked at.

I have a Hanger 9 cap 232 sport with a Super Tigre 61. I think it is about perfect with that engine. You could use your 75 and have a real rocket. If you shop, you can pick these up for less than $130 (try Ebay). Well built airplane that is really tough. I spun mine straight in and only broke the cowl. Couldn't believe my eyes when I went to pick up the peices. I fixed the cowl with some resin, cloth and paint. Airplane is not a first aileron trainer.

Try to look if you can find the Black Horse Extra 300 60 sized. Its not a low wing but it flies really nice. Most importan its CHEAP! Its new so check with the distributors if they have it.

You might look for a .46 size plane that normally builds tail heavy. A person in my club has a Hangar 9 46 size CAP that was tail heavy. This is the silver one with the shark's teeth. He replaced his TT .46 with a Tower .75 and it made a world of difference. it does land a little faster, but he loves it now.

Vctor Flight has several ARF 300S, Edge 540, and sukhoi designed for the 60-90 2 stroke engines. they are made well and fly great. My club has 4 different members with these now.
