how do you convert a GP Big Stik 60 to tail dragger?

Move the landing gear centerline to the LE of the wing. Add a tail wheel, and then fabricate a way of turning the tail wheel. In my case I mounted a servo to it, with a y-harness to the other rudder servo.

Works like a charm..... !!

What Larry said, but you can just add a pull pull off the rudder to the rear wheel instead of a servo. It's a little easier, IMO.
