A regular NiCad,NiMH based ESC will work fine. A LiPoly ESC will work if you can set it for the number of cells and there is a close enough match.
Example 2S LiPoly setting might be 6V and this would be fine for a 3 cell A123.
A 2S LiPoly setting could also be used for a 4 cell A123. It dies not harm A123s to run them down till they are empty as long as you use a balancer or balancing charger.
