Default Replacing Servos

I am replacing servos on the 3 channel plane. My question is: When I move the elevator stick down(towards me) should the elevator move up? The rudder should move in the direction of the stick?

For the rudder, standing behind the plane it should move in the direction of the stick.

Note: if you changed brands of servos, they may move in the opposite direction the originals did; if so, just reverse them at the transmitter. For instance Futaba and Hiteck move in opposite directions with the same change in pulse width.
