What is really the job of the "Dihedral braces" used in wing assembly, is it only to provide an angle between the two wings???? why do we need an angle so ? if so what is the best angle to use ???

The angle of dihedral will depend on the type of aircraft, the reason for it is that it provides natural stability.
Assuming you have a left and right hand wing panel, each will be strong enough because of it's internal structure, spars etc. the weak point is where they are joined to each other at the middle. The brace is to provide strength in this area which takes more load than any other part of the wing.
