Tie the empennage to a post or stake and run the engine while timing it. Best test there is for adequate charge.
Over charging is tougher. When on charge does the battery feel hot, very hot, or just warm? It should never feel uncomfortably hot.

For some good and reliable info on the care of all types of batteries, spend some time at www.rcbatteryclinic.com. Red's advice is very good. Two other sources for good info are http://members.aol.com/davthacker/balancecharging.htm and www.batteryuniversity.com/parttwo-33htm
You will get more partially incorrect and some downright bad info on batteries on these forums. Use Regan's method "Trust but Verify" all info you read about batteries.
