Default Basic charging questions

I just got my new charger, and it has some options that I'm not sure about how to set.

Should I always use the temperature probe? What temp should the cutoff be set at? (the default is 80 celsius, but the manual says not to exceed 120 farenheidt, which is well below 80 celsius).

Should I mess with the delta peak value? How do you know when to do this? Default is set at 20mV per cell (nimh)

The adjustable safety timer is set for 2 hours. Do you guys change that?

There is an adjustable wait time between charging and discharging. How long is recommended?

Should the capacity cut off be set at the max capacity of the battery or greater?

Thanks for your help; correctly charging is the most confusing part of this hobby!

I have an ICE charger and left all defaut values as they are for different batteries. Then, when I created a battery charge pattern, I just used what I saw for a different size but same type (1500mah NiMh) battery.. setting the charge current at 1.5 amps (1500 mah) to equal 1C, which is usually the maximum recommended charge current. The rest, as I said, I just left them at default or what compared to other battery packs of similar type but different sizes.
