Default Crosswind approach...

With a 90 degree crosswind, which is a better approach: crabbing or keeping it lined up on the centerline with the rudder and the upwind wingtip down?

Is one generally more accepted than the other, or is it a matter of preference and airplane type?

Default Crosswind approach...

Pilot skill has a lot to do with it. Crabbing is more acceptable, but the other method you spoke of, called side slipping is great too. Which ever you can do better. Most people tend to crab it down to a certain point, then side slip it.

On full scale, we crab till close to flare, then put the wingtip down and correct with rudder, landing on one wheel sometimes.

Exactly what I said earlier, a crab to a side slip.
