Have you guys ever considered cutting the fuselage in half back near the tail and putting it back together upside down? There isn't a lot of flight stress there, so the reinforcing required would be minimal.

I dont understand why you would do that. The sweet and low is a low wing but just flips the wing and fuse upside down

If one were modding an ARF into a Sweet and Low, it would be the simplest way, IMO. Rather than taking off both tail pieces and reattaching them on the other side and then sheeting the hole, one good precise cut and 4 pieces of 1/8 plywood for reinforcement would get it done. Or maybe I'm just nuts.
