Default Do I need more capacitors on Brushed motor?

I have a GP Thurstmaster 550 can motor. I have it in a boat running with a ProBoat 40 amp esc. The manual for the esc says I need to have 3 capacitors to run the esc. The motor came with just one installed between the + and - poles and that is how it is currently running. I run on a 2.4 radio. My question is .. The boat will run then stop. The steering still works but the motor does not. If I just turn the power to the ESC off and on, the motor will start working as normal. Is this caused by not having the 3 capacitors or is there something else going on?

The three capacitors are usually
connected - -
One across the motor terminals
One from each terminal to case (ground)
The ESC may have one of the output leads in common with the receiver ground.
The three capacitors are usually discs with fairly low capacity.

From the sounds of it, you may also be hitting LVC. You give a pretty good description of it.
If your pack is weak, or you are over amping the pack, or have the cut off value set incorrectly in the esc this is exactly what can happen.
Esc "see's" the voltage is too low, it cuts power to the motor but retains power to your controls. If you cut the throttle then bring it back up (similar to you turning the esc off/on) it resets the esc.
Will run till it "see's" the voltage drop again.

My kids have stuffed around with the carby setting and i can get it to run just need to know what the facttory setting for a vertxe 21
