what exactly is a ESC
Im new to the whole rc plane thing and also to electric, but I like to learn.
So what is an ESC? Imean Iknow that it's an electronic speed control device.
How does it differ from a motor and do all motors need a esc?

You said it, its a speed controller.
The motor is the motor, if physically spins the prop.
Think of it as a gate keeper.
The motor battery is a big tank of water that spins your motor. The ESC is the valve that decides how much water to let through to spin the motor. The amount that gets let through (how far the valve is open) is determined by your throttle stick position.
