engine break in

gday fellas
ive just bought an os .12 cv-x engine and am having some difficulty tuning so i have some questions. First of all the instructions say the HSN should be at 2 turns out for break in which i have found way too lean? In order to get sufficient blue smoke and stop it stalling when i try to accelarate i've found 3 turns out to be the best. Now when i ran it like this it was ok bet it seems to stall after 3-4 minutes of running for some reason. Also, without changing any of the needle settings, the next time i ran the car it was a lot louder (revving higher) and seemed a lot hotter. There was some smoke coming from the engine head after a few minutes and it stalled a few moments latter. The low end needle is at 3 turns out, leaving 1mm opening at the carb at idle.
Any suggestions? I know many people have these engines...any help would save me a lot of time
