Equivelent brushless motor size
I have a standard 540 size can motor in an electric glider using 6 or 7 cell tamiya style packs and want to convert it to brushless.
There are so many brushless motors and I have no idea which one would be suitable. It would need to be an inrunner to suit the installation. I am not after massive performance just able to take it up and switch off for a bit.

A Jeti 15/3 makes a nice brushless upgrade. Throw a 3S LiPoly pack in and you'll have phenomenal performance.
Now I know you said you didn't necessarily want crazy performance, but the point of a sailplane is to sail, not struggle to get to altitude, right?

One option is just to upgrade your battery to a 2 cell lipo. You'll need to make sure your esc has a lipo cut-off, or install a separate cut-off, but you'll be shedding weight and still maintaining the voltage you require. Now, a 3 cell lipo will probably weigh in about the same as your tamiya battery, but with phenomenal power.

Forgot to mention the motor is about clapped out (going now for about 15yrs) and more recently the electric on-off switch has packed up so this is the main reason for looking to change
