I don't believe that your LHS knows it's stuff on radio gear. There is absolutely no problem in operating Futaba servos with a Hitec radio

By "pitch all messed up" do you mean that two of the servos operate correctly when changing collective pitch and the reversed elevator servo operates wrong? You can change the direction of the mix for each servo. I'm not sure about Hitec, but the function should be called Swashplate AFR, Swashplate mixing, or something similar. Make sure the 3 CCPM servos are plugged into the correct channel for your swashplate type (120degree) and use the servo reverse and AFR settings to get everything working properly for cyclic and collective. Some radio and heli manuals suck at explaining this step, but you should be able to find the proper settings in no time. When you're in the AFR settings, you'll notice a percentage listed. Changing the sign (+/-) is how you change the direction of the mix. Keep all the values the same (in other words, if your other servos are at 50% you change the third servo to -50% to change the direction of the mix for that servo while keeping the amount of mixing the same).

Hope some of that makes sense. Sorry I can't give you the exact settings for that heli/radio.
