T-Rex: best motor & ESC set for 3D
I'm considering to upgrade the base kit (Align 2800Kv + 25A ESC) because I found it poor in power.
I've been told that Mega 16/15/3 (76 grs.) and AON 2815-3500 (98 grs.) are very good but the difference in weight is quite noticeable.
Regarding the ESC's I'm told to get Kontroniks (model?) or Castle Creations Phoenix-35.
My current batteries are 3S 2000mAh, 18C.
Suggestions?

Perhaps it's your choice of pinion?
Not that I fly 3D, so you are ahead of me there, however the problem may be that you are not getting enough head speed and that you are running out of motor speed before you run out of power...
I notice that Align sell an 11, 13 and 15T pinion from memory. If you are using the 11, and upgrade to the 15, then you should get a 36% increase in head speed.
In any event, the Align motors come in 400SF and 400LF. The power output also varies from 200w to 290w. You didn't mention which one you have?
I am using a 420LF 3200KV motor on my AluSEF, at 570g flying weight. It has a LOT of spare power, and doesn't even get warm.... However, I run it at max, because the head speed is a touch low. So I use it as a defacto govenor... And so I'm happy to use the 11t pinion. But if I changed to the 15, I think my blades would fly off. I certainly have a LOT of power to spare.
In any event, at 25A, your ESC is only just enough power for your Align brushless motor, so if there really is a power problem, then you need a bigger ESC as well.
And I imagine it should be getting really, really hot. Otherwise, you're not driving it hard enough (ie, need a bigger pinion).

You're right.
Even with 11T pinion, the current motor is quite hot after few hoverings while the battery is just warm.
