Assuming that, generally speaking, you get better sound and thrust. Sound being the more blades the more "wooosh" sound and less souped up dust buster. Thrust I think is generally from higher blade count thus more blade area.
Assuming same motor again, generally the Amps will increase due to higher loading. Higher Amps means less flight time if the same battery is used or more weight if a larger capactity battery is used to compensate for the higher amp draw.
And depepnding on the current ESC a larger ESC could be required to handle the amp increase.
And of course the motor has to be able to handle the increase also.
Just depends what the end result is thats desired and the compromises that can be made for a given system.
