EDF compatible w/ 6S-2500-3000mah lipos?
I own a TREX 500 w/ four 6S 2500-3000mah lipos, I'd like to build a EDF (either F-16, F-5, something along those lines) and utilize the packs I already have, does anyone currently use these packs on their EDF and if so how and with what setup and place o purchase?

You can go for a 70 mm EDF with something like a HET 2W-25 motor, it will pull nothing less than 55A, possibly about 62A. If not you can look at a 90mm fan with a 36mm motor of around 1,600KV ... that will also pull around 60+A. Can your batts take it? For 2,500-3,000 mAh packs on a 70mm set up its heavy but on a 90mm set up you may be short on weight and/or flight time. For 90mm you want to go with around 3,700-4,000 mAh packs as a minimum.
As for planes you can start with EJF.COM or DUCTEDFANS.COM Feeling rich? Try TamJets. Nice stuff there ...
