Inserting quotes into posts

I notice that when I click on the quote button it inserts the entire post into my post. I would like to learn how to insert only portions, or individual sentences into my posts. I have copy and pasted individual sentences, but they will not show up as a quote. I have highlighted a sentence, then hit the quote button, but the whole post again is inserted. Nothing seems to work, yet everyone else seems to know the secret. Is there a place in this forum that teaches /explaines how this site functions, or better yet could someone simply explain how I do this.

When you do a reply you will see a button that says quote
It will insert two html tags [ quote] and [/ quote] (except without the spaces, you can also type the tags as you go)
Just highlight the text you want to quote and cut and paste it between the tags.
You can highlight the text with your cursor, and right click and click COPY or hit CONTROL + C
Position the cursor between the tags and right click and PASTE or CONTROL + V
EDIT: I'm talking about the grey buttons that show up above the reply box, not the quote button in the original post
