Or, if I wanted a second radio, would a 7C work with the 12FG? I ask because my son wants to fly some of my airplanes now, and I'd rather not just hand the radio to him with the plane in-flight.

Yes, this will work fine with this transmitter as the Student.

My plan now is to go ahead and get a 7C radio to use in the student position. That way my son will also have his own radio to use. And to make sure the 12FG and 7C will talk to each other, the 12FG trainer cord is part number FUTM4405, right?
