Default which is which??

In the manual for the T8-FG, of which I have upgraded, in the Endpoint setting section of directions the book uses the terms (travel) and (limit point). Which is which in terms of the dead true endpoint and which is a % of that endpoint's use.

travel is the normal unmixed end point.
limit is the absolute max that the servo can be commanded to move when mixed with another channel.
example
elevator travel set to 100%
elevator limit set to 135%
elevator stick can move the ele 100%
whatever mix is directed to elevator can add an additional 35%

So, being as I'm not much for mixing I should leave them even or the limit above the travel because I have noticed the limit will reduce the throw if reduced below the travel? Correct?

It's easiest to leave everything at the default settings. Limit is the absolute maximum the channel will move, so if you set it to less than Travel, you'll only have as much movement as set by Limit.
