I've been debating on whether or not to build this one, myself.
I'd use a big single, since that will simply the canister installation. The ZDZ 80 Super looks promising; but I'm a newbie at gassers, so seek other opinions...
If you'll be getting into the upper classes of IMAC, you still want the same excess power that the flip-flop (3D) guys crave; those vertical upline snaps take some grunt to power through.
There's a couple of old build threads on this model archived here; you can dig 'em out with the search function.

Mine has a ZDZ 80 RV on it with a big JMB canister. Very good power but I still could use some more for Unlimited IMAC. The Super 80 would be very good IMO.
With carbon everything, 4 aileron servos, canister and a very reliable battery setup, my plane came out at 24.2 lbs with some minor modifications to the plane. If you are comfortable with less bullet proof and noisier setups, you may be able to keep the weight down under 23 lbs, which will make any 75-80cc engine strong enough.
Modifications were mostly for the canister installation, the canopy opens all the way to the cowling and the cowling is mounted on a cowl ring. Firewall is half as thick as called on the plans. Just make sure you reinforce the wing ribs around the wing tube, there is a slight weakness there.
