Default engine temperature

All I need is a ball park idea of what a 36cc Gasser's engine temp should be, I'm reading about 330 degrees fahrenheit does this sound high or is my temp gauge wrong

Sounds like it could be realistic depending on the prop, mixture, and how the engine is enclosed. 200f-285f are fair running numbers with 330f getting pretty warm. Not much room left for more heating at that point. Anticipate early ring problems if the engine runs that warm and more all the time.

TOM the engine is fully enclosed in a hellcat, I think I have plenty of air going over the head, exit cooling air is more than 3-1. The prop is a 18/8 APC

The one to three rule is not exactly what you are looking for, good flow is.
This is actually what you should be striving for. Remember everything on Pe's site is quoted in *C

Some engines do not like that temp, while others are very comfortable with it. I have a hand held blower that runs 350*F+ and is 6 years old, still running strong.

Your yard blower has a fan attached to the mag wheel which ducts to the engine... Our props don't do that job as well.
