I am reassembling a CG Ultimate which I crashed several years ago (kit version). I am installing the original wire landing gear and can't remember which way they go. One way they are angled forward some but with toe in. The other way has toe out. Which way is correct.

I believe you want a little bit of toe-in. That stabilizes taxiing. Toe-out will compound "wandering".
