Anything special to know when changing out external temp probe on JC 160?

No. Use the original plastic mount (there is a single screw through the pcb) Unscrew the M3 screw holding the rear of the probe and pull the plastic cover up.
If you don’t have a new rear tag, squeezing it gently and it will opening it enough to pull the wire out.
