Can the 3421 run on 6v? All the torque ratings are quoted at 4.8v

Yes, you can use it on 6V. I don't have the specs of that servo on 6V. Just as an estimate, the torque would increase to around 70-71 oz-in, and the speed would decrease to around .16-.17 sec/60 degrees.
