Try Harry Higley's series of books. I have a few that are good:
Bipes - gives lots of good advice about building techniques, not just for biplanes
Mostly Mounting - shows various examples of how to mount hardware, servos, gear, etc.
There are no Secrets - includes discussion of covering

Here are a few titles that I've picked up.
Radio Control Airplane How To's Volume 2
Radio Control Airplane Workshop Secrets
Radio Control Airplane Building Techniques
Harry Higley Mostly Mounting
Be sure to check out the wonderful information at Paul Johnson's (cafeenman) website at www.airfieldmodels.com. Think of it as an online book on building.
Also available is a series of videos called the Black Arts by Dave PLatt www.daveplattmodels.com. He has several series including
Building and Fiberglassing Techiniques
Advanced Building Techinques
Detailing and Painting Techinques
Scratch This
For mold making, check out the CD from www.nextcraft.com
For molding balsa, check out the CD from Bob Hunt and Bill Werwage called Balsa Molding Techniques.
I found it at www.airbornemedia.com/store/rv-index.htm They also have other titles for foam construction.
