Default determining flight attitude

I am getting ready to balance my Sailaire glider. As the plans do not show a center line on the fuselage how do I determine the correct flight attitude of the plane? The wings have quite a bit of incidence to them. Are they going to fly flat or at the angle of incidence?

The wing will fly at plus two or plus three degrees in level flight. That is just the cg starting point; don't be afraid to add an ounce or two to the nose if it won't penetrate...JIM LSF796
