I depend on what kind of final product you want. like two tone sand, 6 colors on jungle camo, are you worried about schems you can feel when you run your hand over the model? There are three ways to do it.
One cover the entire model in a base color. then cut out a whole bunch of odd shapes in differant colors and apply with trim solvent.
two cut a whole bunch of odd shapes and iron on one at a time until covered. this takes a wee bit of pre planning to get good coveraged
three paint it using lots and lots of masking tape and paper. kinda of a PITA and usualy very heavy. this can be done either by acually painting the entire model or again cover the model with a base cote then paint differant colors onto the covering.
there really is no secret to it. just study a bunch of pictures of plane. take good close look at other models at the feild to get an idea of configuraqtiond and just go for it
on fomies I just apply magic markers in differant colors and cover in clear packing tape
