Standard wood glues like Titebond/Elmers etc are sandable and work well.

Trim the edge of both sheets so you have a perfectly square and straight cut. Put 1" wide masking tape lengthwise holding some pressure so the edges are tight. Turn over and bend 45 degrees. Use a small diameter of titebond or white glue on the edges. Straighten out the glued sheets and use a credit card to wipe off the excess. I then cover mine with wax paper and lay a glass shelf on top.

Just how I do it. White glue sands well and the glass plate keeps the sheeting even.

As Warren said, use carpenters glue to join sheeting. Apply glue to the edges of you sheeting and join them together. Wipe any excess glue from the joint. Use some wax paper or vinyl sheeting to protect the sheeting and place some weight on top of the joined sheeting to keep the joint flat. allow ample time for the glue to cure.
