I have never tried a flight simulator, but would like to.
Does any of the known brand have demo versions available?
I can't see myself spending $200 on a sim without the ability to try it out first.

Sorry no demos for top sims. However there are plenty of vids on www.AeroFlyPro.com. That's as close as your going to get to a demo. If you watch the videos you'll get a real good idea on how it flies. Read the review by Erick Royer and it will give you a description on how it performs and additional info. Price is only $129 shipped. No unhappy customers.
