Default MULTIPLEX RADIO PROGRAMMING QUESTION

I am having the hardest time understanding/setting up my Evo 7 radio for the throttle on my Heli's. I am use to programming Hitec radio's.
When I have the throttle curve disabled(gov mode) on the radio, I have to have to use the right slider switch for the throttle. I am sure you multiplex guys will know what I am talking about. What I am looking for is when I am in Hover mode, when I bring the throttle/pitch (left) stick down, I want the heli motor to stop.
I can achieve this by enabling the pitch curve -on setting and setting min to 0 and p1 to 0 and then setting the same % power settings for the rest of the power curve.

really I don't understand the reason for having a setting for turning a power curve on and off other than it eliminates the need for having to set all the throttle points when you need to make a change, ie set on you set all the points.
