The left stick fore/aft controls collective pitch and throttle, left/right controls the tail rotor. The right stick fore/aft controls fore and aft cyclic or nose up and nose down, left/right controls left and right cyclic or rolling to the left af rolling to the right.
Collective refers to collective pitch(CP). The pitch of the main rotor blades on a CP heli can be changed allowing the heli to climb or descend without the engine rpm changing. Fixed pitch(FP) helis rely on turning the blades faster to climb and slower to descend.
You might consider spending some time looking over www.raptortechnique.com. Although it is geared towards Raptor helis most of the info is similar to other helis.
