Anybody have any tips on how to remove a cog off an old motor and apply on a new shaft.

You can also heat it with a heat gun or torch to melt the loctite and then yank it off. To re-install, use green locktite which is designed for smooth surfaces.

On press fit stuff, reuse is not a good idea, the metal is stretched and deformed when installed the first time. Especially for something as inexpensive as a pinion gear. Do yourself a favor and just buy a new one.
