I have a Kangaroo that I haven't flown yet. I thought 8411 may be overkill too. In Europe you can get JR 8321 (don't confuse them with 8231!).
They are Metal Gear and produce 9KG torque. This is what I have installed in mine.

Been flying HS's since 1999.......originally used non-dig 4721's......then switched over to single 8411 on each elevon and Volz micros in the rudders......current HS has over 200 flights with that combo.....if I were outfitting a new HS, I would use 8611's.....I think they are a tighter servo and here in the U.S. they are same price as 8411.....
Split elevons was not in the original design of the HS.....as far as redundancy, questionable.....if you do have splits, and one goes hard over, which in my experience is the most common servo failure mode, you are not going to be able to control the plane anyway.......IMO experience with over 4 dozen 8411/8611's in various prop and turbine planes since they first came out, their reliabilty has been essentially 100% over the long haul.....a couple of them have gone south, but with fair warning like increased jitteriness or slowed travel.....
