the instruction manual for my stingray says to us jr 3421 or jr 9411 cannot get them in the u.k so what can i use with out taking out more of the cutout in the wings and fins .

dont mind the make hitec or futaba.would prefer to run it at 6volts .so i think that means i cannot use jr then .so what is other people using in there stingray with out opening up the servo hatch size

Go for the manufacturer who invented the digi servo... Multiplex digi servos, best on the planet, good selection here http://www.modelspot.com/mpx/digiservo.htm
Should be one or two that will fit your cutouts and they are all designed to run on 6v. All the specs are at the bottom of the page.
