I know nothing about electric trucks, but is it possible to put 2 bigger engines like2 650's in an emax, and what gains would i experience

You can put bigger motors in. They will have more torque, but most likely less rpm. You'll have to gear it for speed to make it worth while and you'll need something other than the stock ESC or 1 ESC for each motor.
