If it stalls alot at WOT, if it doesn't smoke, if its running hot (about 300 or more), or if its just absolutely running alot better then it normally does.

You will also notice detonation, or inconsistant running, while decelerating. Just like any other kind of engine, it will hesitate, and in some cases stall.

Get a temp gun and point it at the glowplug down in the cooling head. If it reads around 200-260 you should be good, but try to stay within those temps, to cool is just as bad as to hot. If you dont have one, then judt go by what the others where saying. Also if the engine is overheating (to lean) then it will start smoking/steaming. I suggest to get a temp gun.

If you don't feel much resistance when you turn the flywheel with your finger while the engine is cold is a sign of excess wear.
A hot engine will turn over easier.
As for gooey crap in the engine, that just can't be a good thing.
A bit more information would help in diagnosing that.
There will usually be some oil residue left in the engine and pipe. It likes to drool on my leg when I pick my truck up to look/work on it[X(]...[:@].

Hard to start could be just a glow plug that need to be replaced.

Or denatured alcohol for general cleaning.
Alcohol, a stuff bristle brush, and compressed air.
